STEP 1: FOLD & RINSE

Start by opening your V60 filter and creasing it so that it remains open, and creates the cone where you will brew your coffee.

Place prepared filter into your V60.

Using 300 ml of hot water, thoroughly rinse your filter. This will get rid of any paper taste that the filter is carrying while at the same time preheating your cup or server.

STEP 2: GRIND

Weigh out 15 grams of coffee beans. You may adjust the amount later if you feel like you want to increase or decrease the strength and body of your brew.

Grind your coffee to a grind size that is slightly below medium. It should be somewhere between table salt and white-sugar granules.

Before you brew, make sure you pour out that rinse water. Place your ground coffee into the pre-wet filter. Once the coffee bed is in the filter, tap your brewer to level the coffee bed and then use a spoon or stirrer to make a small well in the middle of the coffee bed.

STEP 3: PRE-INFUSION

Start your brew by getting rid of all of the trapped carbon gasses in your coffee. Those gasses will make it harder to have an even extraction.

To do this, start your timer and pour 30 ml of coffee starting in the well you created, and then working out in concentric circles.

Allow this to sit until the timer reaches 30 seconds. The fresher your coffee is, the more it will likely bubble during this part of the brew.

STEP 4: MAIN POUR

Split the remaining pours into three 70 ml pours. Again, using concentric circles, pour your first 70 ml at a moderate pace. Finish your first pour by the 1:00 mark. Let sit for 15 seconds. Remember, you already had poured 30 ml during the pre-infusion, so the scale should show 100 g after your first pour.

Pour the second 70 ml from 1:15 to 1:30, let sit for 15 seconds.

Pour the final 70ml from 1:45 to 2:00 for a final brew weight of 240 ml. Allow the brew water to draw down through the bed.

STEP 5: SERVE

Once the continuous stream turns to dripping, your brew is done.

Remove the V60 brewer from on top of the cup/server and set it aside.

If you brewed into a cup, take a spoon and stir to ensure that your brew is well integrated. If you brewed into a server, swirl or stir before pouring to your cup(s).

Serve and enjoy!
