WHAT YOU NEED

 

Syphon brewer
Metal or cloth filter
Heating element (burner or lamp)
Grinder
15 g of ground coffee
Hot water (93° C)
Scale
Timer
Stirrer (paddle or spoon)
Mug

STEP 1: PRESOAK FILTER/
PREP BREWER

Start by soaking your filter for five minutes in hot water. This will ensure that your filter is clean. If you are using a metal filter, skip this step.

Place your filter in the top chamber “hopper” of the syphon, allowing the chain and hook to pass through the glass tube at the bottom of the chamber. Pull chain to hook filter on to the class tube. Place hopper aside.

 

Fill bottom glass bulb with 300 ml of hot water.

​

Insert the hopper with filter securely in place into the bulb. Using very light pressure to ensure a connection between both parts.

STEP 2: HEAT WATER,
WEIGH, AND GRIND

Take your entire syphon assembly and position it over your heating element. Light the burner or turn on the lamp so that your water begins heating.

While your water is heating, weigh out 20 to 25 grams of coffee.

​

Grind the coffee. It should be medium coarseness, like table salt.

STEP 3: MAGIC OR SCIENCE?

Once your water starts boiling, vacuum pressure will cause the water to pass from the bottom bulb, through the glass tube, up to the hopper. Once it has done this, turn your heating element down and use your thermometer to get your water between 88° C to 92° C.

Add ground coffee to the water in the upper chamber and gently stir with your paddle to ensure that all of the coffee grounds are wet.

STEP 4: DRAW DOWN

Allow the coffee to brew for one minute and ten seconds.

​

Once your brew time is up, remove your syphon from the element and stir the coffee slurry 10 times. The coffee will now begin to draw down from the hopper to the bulb.

STEP 5: SERVE

It should take about one minute for the coffee to completely draw down to the lower chamber. You will know when it is finished because a dome of coffee grounds will appear in the upper chamber and your brewed coffee in the lower chamber will bubble.

Carefully remove the upper chamber from the lower bulb and set aside. Swirl coffee before decanting into a mug.

​

To ensure the most nuanced drinking experience, allow the coffee to cool for a couple of minutes before drinking.
